RECIPES FOR HEALTHY PLEASURES: COOKING WITH 'C’
In consideration of the evidence that Vitamin C is one of our prime defenders against free radical attack and an important antioxidant, it makes good sense to place emphasis on Vitamin C-rich foods that also help keep arteries from clogging. Cooking with 'C can be a health-saving strategy and pleasurable as well.
To become a C-conscious cook, start your shopping in the produce department, and include at least one or two of the following in each day's meals: broccoli, Brussels sprouts, cabbage, cantaloupe, cauliflower, citrus fruits, currants, green and/or red peppers, guavas, honeydew, kohlrabi, papaya, persimmon, pimentos, strawberries, tomatoes, and dark, green leafy vegetables. Try to include five - (yes, FIVE) - servings of fresh vegetables and/or fruits every day.
Now for some innovative ways to use them. The first is a favorite with our daughter.
SHARON'S SPINACH SOUP
2 quarts boiling stock
1/2 cup diced carrots or vegetable water 2 cups cooked chopped spinach
1/2 cup chopped onion
2 tablespoon olive oil
1 tablespoon chopped parsley
2 cups cooked brown rice
1/2 cupthinly sliced celery
Salt and pepper to taste
4 coarsely cut tomatoes 1/4 cup Parmesan cheese (or lean whole tomatoes)
Add onion, parsley, celery, tomatoes and carrots to boiling stock. Simmer until celery is just tender (12 to 18 minutes). Saute spinach in olive oil 2 minutes. Stir into simmering stock. Add rice and seasonings. Cook 5 minutes. Serve with a light garnish of grated cheese.

We have Sharon to thank for another favorite dish. She concocted this one - Yum Ba Mee, a Korean noodle salad - to entice fellow real estate agents to view houses she'd listed for sale - but we revised it for an easy-fix card-players' lunch.
