RECIPES FOR HEALTHY PLEASURES: POP'S MEATLESS STUFFED CABBAGE
12 large cabbage leaves
Salt and pepper to taste
1 beaten egg
1/4 tsp. dried, crushed
1/4 cup water thyme leaves
2 cups cooked brown rice
1 cup tomato sauce, canned
1 onion, grated
1/4 cup lemon juice
1 carrot, grated
2 tbsp. honey
Blanch cabbage leaves by covering them with boiling water for 2 or 3 minutes. Drain and set aside to cool.
Combine rice, egg, onion, carrot, salt, pepper and thyme in a large bowl. Divide into 12 equal portions and place one portion in the center of each cabbage leaf. Roll it up, envelope style, tucking the ends in securely. Place close together in a heavy skillet.
Combine the tomato sauce, lemon juice and honey, and pour over the cabbage rolls, adding enough water to cover. Cover tightly and cook over moderate heat 30 minutes. Bake in the oven another 30 minutes at 350 degrees to brown on top, turning once to brown under sides. Hot water may be added in small quantities if necessary during the baking period.
