RECIPES FOR HEALTHY PLEASURES: MAGNOLIA EGG PLANT
This recipe comes to us by courtesy of Mrs. Helen Hensley, who runs the Magnolia Cafeteria in Little Rock, Arkansas.
2 lb. eggplant
1/4 lb. American cheese, diced
1 egg or, low-fat mozzarella, shredded
2 tbsp. olive oil
1 medium onion, chopped
1 #2 can tomatoes
Salt, peppertotaste
Peel and slice eggplant. Boil until tender. Drain well. Saute in small amount of olive oil. Place in mixing bowl, and fold into eggplant mixture the pulp of canned tomatoes, egg, diced cheese and seasonings. Mix well with wire whip. Add enough cracker meal to tighten mixture.
Pour in a baking dish and sprinkle the top with a layer of cracker meal. Dribble with a bit more oil, additional grated cheese, and bake in 400 degree open 20 minutes. Serve hot out of the oven to 6 lucky people.
