RECIPES FOR HEALTHY PLEASURES: JERRY'S LASAGNA
Make the filling first, by mixing together the following ingredients.
1 cup low-fat large curd cottage cheese
1/4 tsp.oregano
1-1/2 cups chicken stock (skim off the fat) or vegetable water
1 small clove minced fresh garlic
Set the above aside. Next, assemble the rest of the ingredients:
2 cups thinly sliced zucchini
1/2 fresh lemon
1 cup sliced mushrooms
1 tsp. paprika
1 cup chopped onion
Freshly ground pepper
10 curled edge lasagna noodles
1 cup diagonally sliced green beans
1/4 red or green bell pepper, cut in 1/4" strips
Preheat the oven to 350 degrees. Saute the onions, zucchini, mushrooms, green beans and pepper until just tender in a large skillet that has been lightly coated with nonstick spray. Season with lemon juice, paprika and pepper to taste.
Lightly coat the bottom of a square 8x8 inch glass casserole dish with nonstick spray. Arrange one layer of lasagna noodles (dry) in the bottom of the dish, breaking as necessary to fit. Cover with half the vegetable mixture. Add another layer of noodles. Spread all the filling on top. Add another layer of noodles, covering them with the balance of the vegetable mixture. Pour chicken stock over the top. Cover and bake for 45 minutes; then uncover and bake for 15 minutes more.
